Shrimp Endive Salad
Endive is kind of a tricky one, it's crisp and bitter and usually served with something really heavy in flavor like blue cheese to make it more tolerable. Since I had a bunch of fresh tomatoes I thought the acid and sugars from them would make a nice base to a dressing with it, something akin to a shrimp Louie. I smashed two tomatoes into a bowl and added mayonnaise (can use a little yogurt as well), horse radish, lemon juice, and capers, and s&p to taste. Next I sliced some cucumber and tossed those in the bowl along with baby shrimp and the endive. When everything was well coated I plated it atop Boston lettuce and garnished with cilantro, capers, and fresh cracked black pepper. It was light and refreshing yet crisp and tart followed by the smooth, creamy sweetness of the shrimp.
